Semi Washed

Semi-Washed, also known as wet-hulled or Giling Basah in Indonesia, is a unique processing method that combines elements of both washed and natural processes. After harvesting, the coffee cherries are pulped to remove the outer skin. The beans, still covered in mucilage, are then partially fermented for a short period (usually overnight) before being washed and partially dried to about 30-35% moisture content. At this point, the parchment layer is removed while the bean is still moist, and then the green bean is dried to the standard moisture level. This process results in coffees with distinctive characteristics: lower acidity, fuller body, and often earthy, herbaceous, or spicy notes. Semi-washed coffees are particularly associated with Indonesian coffees, especially those from Sumatra, and contribute to their unique flavor profiles.
